Meat is eaten rarely. The main food ingredients are
noodles, scones, fruit, walnuts, vegetables, legumes, sheep cheese, sour milk,
milky tea. The wheat or flour dishes are boiled with vegetables or fruit;
flour-based dishes are never boiled with meat. The ritual dishes include
crepes, havlo, ozaq – pieces of dough fried in butter, and kashk – a gruel cooked from wheat, kidney beans, peas and lentils during the firing
of the earthenware; the pot in which kashk is made is put near the mound
of earthenware being fired and the kashk should be cooked on that fire.
It is eaten only by female master potters and other women and not given to men.
